Traditional Cherry Clafoutis Recipe – An Authentic French Dessert
Introduction
Cherry clafoutis is a classic French dessert, loved for its simplicity and delicate flavor. It combines juicy cherries with a light, custard-like batter, offering a texture between a flan and a cake. Ingredients (Serves 6)
- 500 g fresh cherries (with or without pits)
- 4 eggs
- 100 g granulated sugar
- 1 packet of vanilla sugar
- 100 g flour
- 250 ml milk
- 30 g melted butter
- 1 pinch of salt
- Butter and sugar for the baking dish
Instructions (About 15 min prep time, 40 min baking time)
1. Prepare the Cherries
- Wash and dry the cherries.
- You can leave them whole with the pits (for more flavor) or pit them for easier eating.
2. Prepare the Batter
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, beat the eggs with the sugar and vanilla sugar until the mixture becomes pale and slightly frothy.
- Add the flour and a pinch of salt, mixing until smooth.
- Gradually pour in the milk while stirring to prevent lumps.
- Stir in the melted butter and mix well.
3. Assemble the Clafoutis
- Butter a baking dish and lightly sprinkle it with sugar to create a caramelized crust.
- Arrange the cherries evenly in the dish.
- Pour the batter over the cherries, ensuring they are well covered.
4. Baking
- Bake for 35 to 40 minutes, until golden brown and firm to the touch.
- Check doneness by inserting a knife in the center—it should come out clean.
5. Serving
- Let the clafoutis cool slightly before serving.
- Optionally, sprinkle with powdered sugar for an extra sweet touch.
Tips & Variations
- With or without pits? The traditional version keeps the pits for more flavor, but you can remove them for convenience.
- Lighter version: Swap whole milk for almond milk and reduce sugar to 80 g.
- Try different fruits: This recipe also works well with apricots, plums, or raspberries!
